Venison Pho
Ingredients:
cubed Venison- about 1 pint (one pint is good for about 4 servings)
Broth (Homemade bone broth, beef or Pho broth)
Ginger- 1/2 table spoon (ground is Ok)
Minced Garlic- 4 Tablespoon
Minced Onion white- 3-4 Tablespoon
Cinnamon- 1 teaspoon or a pinch
Star Anise- 4
Pepper- 1 teaspoon or a pinch
Whole allspice- 4
Chicken Bullion- 2 cubes
Green onion- 1 bunch
Sprouts- 1 can
Jalapeno- To taste (whatever floats your boat)
Hoisen- 2 Tablespoon
Sriracha- to Taste (again how much heat you like)
Worchestershire- 2 Tablespoon
Rice Noodles
Thai basil or Flat leaf (preferred Fresh)- 5 leaves
Clarified butter- 2 heaping tablespoons
Fresh Whole lime
In a nonstick large pot melt clarified butter. Start aromatics. Saute onion, garlic, ginger, and a pinch of cinnamon. Once very fragrant pour in broth. Add jalapeño to taste, allspice, dash of pepper, star anise, hoisen, worchestershire, basil and bullion. Let broth come to boil and reduce to simmer. Allow broth to continue to simmer for 1 hour. Once broth has simmered for 1 hour strain out all whole spice and basil.
start pot of water with salt. cook noodles per instuctions (per package). While noodles are cooking prepare meat and season with salt and pepper.
Bowl noodles, broth, and meat. top with sprouts and slice of lime. Add sriracha to desired flavor and heat and enjoy.
